The Champagne Douge estate is located in the Côte des Bar, in the southern part of Champagne where the Kimmeridgian marl soils have more in common with Chablis then the rest of Champagne. The majority is Pinot Noir with some Chardonnay and a little Pinot Blanc. Florent Douge's approach is Burgundian, treating each plot individually, adapting working methods to the site and variety. Duodecim NV is made from a blend of 75% Pinot Noir and 25% Chardonnay; the grapes were hand-harvested, fermented in oak, before ageing for 2 years in bottle prior to disgorgement and bottling. A rich nose with orchard fruit and red plum. Beautifully balanced with generosity of fruit, a savoury note, and refreshing finish. Equally at home as an aperitif or paired with poultry.
